SPAGHETTI CARBONARA

Ingredients:

- 1 pound spaghetti

- 3-4 whole eggs

- one cup of grated Parmesan

- 1/2 pound of panceta or thick cut bacon, diced

- one tablespoon of extra virgin oil or melted butter

- sal and pepper to taste

- 1-2 garlic cloves

Method

1. Cook the pasta in boiling salted water

2. Meanwhile sauté the pancetta/bacon and garlic

3. In a bowl beat the eggs and mix with half of the cheese

4. Toss pasta with pancetta/bacon

5. Add the beaten egg mixture

Serve at once with the rest of the parmesan and freshly black ground pepper . If you want, sprinkle with a little fresh chopped parsley.
