It all starts with the beans extracted from the well-baked fruits of the cocoa tree, growing in tropical areas. The beans are left for fermentation for a few days, while they get a brownish color and the characteristic cocoa taste. They are then quickly dried, usually in the sun, after which they are ready to be sent to the chocolate factory. Here the impurities are removed, after which the cocoa beans are prepared so that the flavor becomes stronger, then cleansed by the bark. What remains, the core is the actual cocoa bean with a characteristic but still bitter taste. Because they have a very high fat content, when they are crushed and mixed, the grains turn into a paste, called cocoa liquor, although it does not contain alcohol. Further, the liqueur is processed into special machines until the fat is separated from it. This is known as cocoa butter and is used both in chocolate and in cosmetics. What remains after the separation of the fat is the cocoa powder. We have already obtained the most important ingredients of chocolate, the cocoa liqueur. To this is added powdered milk, sugar and vanilla, and from the various combinations of these ingredients the three types of chocolate are obtained: bitter chocolate, milk chocolate, white chocolate. At the end, chocolate is poured into shapes, followed by the other ingredients: peanuts, raisins, biscuits, etc.
