Vegetables and fruits are widely consumed plant foods, with an important role in nutrition due to their special sensory properties and the precious nutrients they contain: carbohydrates, enzymes, organic acids, vitamins and minerals. A peculiarity of vegetables and fruits lies in the fact that most of them can be used by humans in fresh food as such, as well as in various culinary preparations or in preserved form. The importance of consuming vegetables and fruits is complemented by their participation in a significant proportion in the concept of recipes of culinary preparations and semi-preparations: we can say that there is no menu in which vegetables and fruits do not intervene in a proportion, sometimes quite high. Another direction of the importance of vegetables and fruits refers to the therapeutics of their use, as adjuvants of drug treatment and in preventive medicine. 1. Quality characteristics of vegetables and fruits Vegetables and fruits intended for fresh consumption, as well as for industrialization, must meet a series of quality characteristics such as: shape, size, consistency of the pulp, taste, juiciness of the pulp, aroma, etc. When assessing the quality of lots of vegetables and fruits, the following characteristics are also taken into account: the authenticity of the variety, the uniformity of the variety, the state of freshness, the state of health and cleanliness, the degree of maturation, defects, etc. Depending on all these characteristics, vegetables and fruits are classified by quality classes: extra, I, II. Shape - is specific for different species and varieties of vegetables and fruits, being, depending on the nature of the plant organ: cylindrical, conical, frustoconical, oval, oval-elongated, pear-shaped, spherical, spherical-elongated. Due to improper nutritional or climatic conditions (drought, excess moisture, cold - heat, hail, etc., pest attack) vegetables and fruits can deviate from their natural form. These deviations of the form have disadvantages both in terms of quality and in terms of industrial processing.
