Eat wisely but not too well, means: 'eat wisely' - enjoy whatever you put on your plate 'but not too well' - but don't go back for third and fourth helpings, and don't sop up the gravy with the bread crusts! In other words, don't make a pig of ourself. 
The eat wisely also refers to the fact that at a dinner party there are often extra courses -- appetizers, sorbets, cleansers, afters -- a full dinner party menu can run to around a dozen courses. So eating wisely means tasting but not heaping your plate with food, especially at the start of a meal, because there will possibly be several more courses coming up.
