French cuisine or French cuisine (fr. Cuisine française) represents the totality of culinary styles developed over time on the territory of France, following the local tradition, but also accepting influences from the colonies of the former Empire. It has evolved over the centuries, following social and political changes in the country. The Middle Ages saw the development of sumptuous banquets with extremely spicy food and richly decorated by the chefs of the high aristocracy, one of the most famous being Guillaume Tirel. With the French Revolution, culinary habits changed with the vision of master chefs such as Pierre François La Varenne and Napoleon Bonaparte's chef Marie-Antoine Carême who began the systematic use of spices and herbs. French cuisine was codified in the twentieth century by Auguste Escoffier, this collection becoming a reference point in modern cuisine, what is known today as haute cuisine (in French grande cuisine), representing today not only a food habit, but also a cultural model.
